Baked Beef Tacos

INGREDIENTS

  • 1 ½ – 2 lbs Ungers Lean Ground Beef
  • 6 Tablespoons Bearded Butcher Taco Seasoning (divided)
  • 2 – 10 oz cans RO*TEL Chopped Tomatoes & Green Chilis (divided)
  • 1 – 16 oz can Refried Beans
  • 2 cups shredded Mexican cheese blend, divided
  • ¼ cup chopped Fresh Cilantro, optional
  • 1 teaspoon Hot Pepper Flakes, optional
  • 10-11 hard Taco Shells (we could not fit 12 in the pan)
  • Chopped green onions for garnish

DIRECTIONS

  1. Preheat oven to 425°.
  2. In a large skillet, brown the ground beef over medium heat, 6-8 minutes or until no longer pink, crumble meat; drain. Stir in the taco seasoning and 1 can undrained tomatoes; heat through.
  3. In a separate bowl, mix refried beans, 1/2 cup cheese, cilantro, remaining can of undrained tomatoes and, if desired, hot pepper flakes. Spread onto bottom of a greased 13×9-in. baking dish.
  4. Stand taco shells upright on bean mixture. Fill each with 1 tablespoon cheese and about 1/3 cup beef mixture. Cover with tinfoil and bake 15 minutes.
  5. Uncover; sprinkle with remaining cheese. Bake, uncovered, 5-7 minutes or until cheese is melted and shells are lightly browned. Sprinkle with green onion. Enjoy!
