
Bacon Wrapped Pork Tenderloin Bites
INGREDIENTS
- Unger Meats Pork Tenderloin
- Unger Meats Bacon (original or Cracked Pepper Bacon)
- Yellow Mustard
- Seasoning of choice (we used Prairie Smoke & Spice Sweet & Tangy Rub)
- BBQ Sauce of choice (we used Prairie Smoke & Spice Blue Ribbin’ Sweet Sauce)
DIRECTIONS
- Preheat grill to 350 F.
- Begin by trimming any fat or silver skin off the pork tenderloin (there should not be much)
- Slice the tenderloin down the middle length wise so you are left with two long strips per loin. Then cut into 1 1/2 “ bite size pieces.
- Toss to coat with some Yellow Mustard (this is only the carrier that will hold the spice – you will not taste the mustard)
- Generously season the pork tenderloin Prairie Smoke & Spice Sweet & Tangy Rub (or your seasoning of choice).
- Wrap each piece of pork in a strip of Bacon.
- Place them all on skewers (this will also hold the bacon in place until it cooks)
- Place on the grill for approximately 20 mins (internal temperature of 140-145 F) *WATCH the closely. The bacon may cause some flareups and it’s SO important to not overcook the pork.
- Brush with Prairie Smoke & Spice Blue Ribbin’ Sweet Sauce (or your BBQ sauce of choice). Allow them to get nice and sticky.
- Remove from the grill and let them rest for a few minutes.
