
Bacon Beef Butternut Squash
INGREDIENTS
- 1 Butternut Squash, cut in half
- 1 lb Unger Meats Ground Beef
- 6 slices Unger Meats Bacon
- 3 small Onions, chopped fine
- 1 stalk Celery, chopped fine
- 1/2 lb Mushrooms, chopped fine
- Salt & Pepper, to tase
- 1 teaspoon Cinnamon
- 1/2 cup Parmesan Cheese
DIRECTIONS
- Preheat oven to 350 F
- Cut squash in half and scrape out the seeds
- Place face down in a large dish with 1/2 inch of water and cook for 30 minutes
- While its in the oven, cook the bacon in a pan until crispy, set aside and leave the bacon fatĀ in the pan
- Add the onions, celery, and mushrooms to the pan; then add the beef
- Season with salt, pepper, and cinnamon to taste
- Continue stirring until the beef is cooked through. Remove from heat and place in a bowl
- Remove the squash from the oven. Allow to cool.
- Once it’s cool enough to handle, scrape out some of the flesh, leaving approximately 1/4 inch of squash. Add squash to bowl with meat and vegetables.
- Crumble the cooked bacon and add that to the bowl with meat mixture.
- Mix well. Stuff the squash halves with the beef mixture and place back in the 350 degree oven for about 20-25 minutes
- Remove squash from oven, top with parmesan cheese.
