Bacon Beef Butternut Squash

INGREDIENTS

  • 1 Butternut Squash, cut in half
  • 1 lb Unger Meats Ground Beef
  • 6 slices Unger Meats Bacon
  • 3 small Onions, chopped fine
  • 1 stalk Celery, chopped fine
  • 1/2 lb Mushrooms, chopped fine
  • Salt & Pepper, to tase
  • 1 teaspoon Cinnamon
  • 1/2 cup Parmesan Cheese

DIRECTIONS

  1. Preheat oven to 350 F
  2. Cut squash in half and scrape out the seeds
  3. Place face down in a large dish with 1/2 inch of water and cook for 30 minutes
  4. While its in the oven, cook the bacon in a pan until crispy, set aside and leave the bacon fatĀ in the pan
  5. Add the onions, celery, and mushrooms to the pan; then add the beef
  6. Season with salt, pepper, and cinnamon to taste
  7. Continue stirring until the beef is cooked through. Remove from heat and place in a bowl
  8. Remove the squash from the oven. Allow to cool.
  9. Once it’s cool enough to handle, scrape out some of the flesh, leaving approximately 1/4 inch of squash. Add squash to bowl with meat and vegetables.
  10. Crumble the cooked bacon and add that to the bowl with meat mixture.
  11. Mix well. Stuff the squash halves with the beef mixture and place back in the 350 degree oven for about 20-25 minutes
  12. Remove squash from oven, top with parmesan cheese.
